They say you can't eat well living in a van. In this episode, my 15-year-old son proves them wrong by taking over the kitchen to cook authentic Thai food in our tiny Mercedes Sprinter conversion.
We’ve arrived at one of our favorite spots in Spain: La Manga. After a year of intense, high-speed travel, we are finally embracing a slower pace of life. No rushing, no tick-lists—just off-grid living, electric scooter rides, and good food.
But this stop is just the calm before the storm. We are about to head to a "World School Hub" called Shepherd's Rest, a decision that could change our entire van life journey.
