THOUSAND ISLAND DRESSING:
Ample fresh leafy greens, chopped for salad
6-10 Roma tomatoes, diced for salad
2-3 cucumbers, diced for salad
1/2 small cucumber, small diced for dressing
1/2 sweet bell pepper, small diced for dressing
1/4 small sweet onion, small diced for dressing
6 medjool dates, pitted (3 small diced for dressing, 3 for blending)
1/4 cup dried tomatoes
1 tsp mustard powder
1/2 tsp paprika
1/3 cup tahini (or cashews)
1/4 cup lemon juice (for soaking) (Video Error: NOT 1 cup total of lemon juice, but 1/2 cup total)
1/4 cup lemon juice (for blending)
1/8 clove garlic
water, to reach desired consistency
1) Fine dice cucumber, bell pepper, onion and 3 dates.
2) Add the 1/4 cup lemon juice, paprika and mustard powder to the diced produce, stir and store in fridge for a couple hours or up to 48 hours.
3) Blend all the ingredients together, aside from the soaking produce, and then stir in the marinated ingredients.
4) Pour over salad and enjoy!
